If you’re anything like me every once in awhile you buy something, get home and go what the hell am I going to make with this?!
Enter a box of Jello Cheesecake Pudding!
1 stick butter, at room temperature
1/2 c. sugar
1/2 c. brown sugar
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda
1 box instant cheesecake pudding
1 c. flour
1/2 c. white chocolate chips
Preheat oven to 375 degrees.
(I use a Kitchen Aid stand mixer for all baking)
Mix butter, brown sugar and sugar. Add egg and vanilla and mix.
Add salt, baking soda and pudding and mix.
Add flour gradually while mixing.
Stir in chocolate chips. I used white vanilla chips, but chocolate chips would be great too!
Place cookies on a baking sheet (I use a small ice cream scoop) and bake for 7-8 minutes.
